Manufacturing Process:
Raw Material Selection: Select ripe, firm, bright red strawberries with uniform size, aroma, and sweetness. Avoid overripe, moldy, or bruised fruits. Washing & Cleaning: Wash strawberries thoroughly with clean potable water. Sanitize with 50–100 ppm chlorinated water to reduce surface microbes. Sorting, Hulling & Cutting: Remove green caps (hulling). Sort out defective fruits. Cut into halves, quarters, or slices (5–10 mm thick) for uniform drying. Pretreatment (Optional): To preserve bright red color and prevent oxidation: Dip in ascorbic acid (0.1–0.3%) or Citric acid solution (0.2–0.5%) for 2–3 minutes. Drain excess solution before freezing. Freezing: Rapidly freeze strawberry slices at –35°C to –40°C. Quick freezing forms small ice crystals, preserving color, structure, nutrients, and flavor. Freeze Drying: Place frozen strawberries in the freeze-dryer. Primary Drying (Sublimation): Shelf temperature: –40°C to –50°C, gradually raised to 0°C. High vacuum sublimates ice, removing ~90% of free moisture. Secondary Drying (Desorption): Shelf temperature: 20–40°C under vacuum. Removes bound water. Final moisture content: 2–4%. Milling / Grinding: Freeze-dried strawberry slices are ground into fine powder using a hammer mill or pulverizer. Sieved to uniform mesh size (80–100 mesh). Blending & Standardization (Optional): To improve flowability and reduce stickiness, add carriers such as maltodextrin (if needed). Blend to ensure consistent flavor, color, and solubility
