Manufacturing Process:
Raw Material Selection: Select ripe, sweet, and firm pineapples with good flavor and aroma. Avoid overripe, bruised, or fermented fruits.
Washing & Cleaning: Wash pineapples thoroughly with clean potable water. Sanitize with chlorinated water (50–100 ppm) to reduce microbial load. Peeling & Cutting: Peel off the rough skin and remove the eyes. Remove the core (if required). Cut the flesh into small cubes or slices (1–2 cm thick) for uniform freezing and drying. Pretreatment (Optional): To preserve bright yellow color and prevent oxidation: Dip slices in ascorbic acid (0.1–0.3%) or Citric acid (0.2–0.5%) solution for 2–3 minutes. Drain excess solution. Freezing: Rapidly freeze the pineapple pieces at –35°C to –40°C. Quick freezing ensures smaller ice crystals, protecting cell structure, flavor, and nutrients. Freeze Drying: Place frozen pineapple in the freeze-dryer. Primary Drying (Sublimation): Shelf temp: –40°C to –50°C, gradually increased to °C. High vacuum sublimates ice directly into vapor, removing most water. Secondary Drying (Desorption): Shelf temp: 20–40°C under vacuum. Removes bound moisture. Final moisture content: 2–4%. Milling / Grinding: Freeze-dried pineapple pieces are ground into fine powder using a hammer mill or pulverizer. Sieved to uniform particle size (80–100 mesh). Blending & Standardization (Optional): For better flowability and reduced stickiness, carriers such as maltodextrin or permitted starches may be blended. Standardized to maintain uniform flavor, solubility, and texture.
