Manufacturing Process:
Raw Material Selection: Choose ripe, firm, and sweet pears of uniform size and maturity. Avoid bruised, overripe, or diseased fruits. Washing & Cleaning: Wash thoroughly with potable water. Use 50–100 ppm chlorinated water for surface sanitization to reduce microbial load. Peeling & Cutting: Peel the skin (optional, depending on desired powder characteristics). Cut the pears and remove the core and seeds. Slice or cube into 1–2 cm uniform pieces for consistent freezing and drying. Pretreatment (Optional): To prevent enzymatic browning and preserve color: Dip in ascorbic acid (0.1–0.3%) or Citric acid (0.2–0.5%) solution for 2–3 minutes. Drain excess solution before freezing. Freezing : Rapidly freeze pear slices at –35°C to –40°C. Quick freezing ensures small ice crystals, preserving texture, nutrients, and flavor. Freeze Drying : Place frozen pear slices in the freeze-dryer. Primary Drying (Sublimation): Shelf temperature: –40°C to –50°C, slowly raised to 0°C. High vacuum sublimates ice, removing most free water. Secondary Drying (Desorption): Shelf temperature: 20–40°C under vacuum. Removes bound moisture. Final moisture content: 2–4%. Milling / Grinding : Freeze-dried pear pieces are ground into fine powder using a hammer mill or pulverizer. Sieve to achieve uniform mesh size (80–100 mesh). Blending & Standardization (Optional) : For flowability and reduced stickiness, add carriers such as maltodextrin (if needed). Standardize to ensure consistent color, flavor, and solubility.
