Manufacturing Process:
Raw Material Selection: Select ripe, firm, and sweet papayas with uniform color and aroma. Avoid overripe, damaged, or diseased fruits. Washing & Cleaning: Wash papayas thoroughly with clean potable water. Sanitize using 50–100 ppm chlorinated water to reduce microbial load. Peeling & Deseeding: Peel off the outer skin. Cut papaya and remove seeds completely. Cutting / Slicing: Cut the papaya pulp into uniform slices or cubes (1–2 cm thick) for consistent freezing and drying. Pretreatment (Optional): To preserve color and prevent enzymatic browning: Dip slices in ascorbic acid (0.1–0.3%) or citric acid solution (0.2–0.5%) for a few minutes. Drain excess solution before freezing. Freezing: Rapidly freeze papaya pieces at –35°C to –40°C. Quick freezing forms small ice crystals, maintaining cell structure, flavor, and nutrients. Freeze Drying: Place frozen papaya slices in a freeze-dryer. Primary Drying (Sublimation): Shelf temp: –40°C to –50°C, gradually increased to 0°C. Ice sublimates directly under vacuum, removing most of the water. Secondary Drying (Desorption): Shelf temp: 20–40°C under vacuum. Removes bound moisture. Final moisture content: 2–4%. Milling / Grinding: Freeze-dried papaya slices are ground into fine powder using a hammer mill or pulverizer. Sieved to uniform mesh size (80–100 mesh). Blending & Standardization (Optional): To improve flowability or reduce stickiness, carriers such as maltodextrin or permitted starches may be added.Blended to maintain consistent flavor, color, and solubility.
