Manufacturing Process:
Raw Material Selection: Select fully ripe, sweet mangoes of uniform size and variety (Alphonso, Kesar, etc.). Avoid unripe, overripe, or diseased fruits. Washing & Cleaning: Wash mangoes thoroughly with potable water. Sanitization using chlorinated water (50–100 ppm) to reduce surface microbes. Peeling & Cutting: Peel mangoes and remove the seed. Cut pulp into small slices or cubes (1–2 cm) for uniform drying. Pulping (Optional, depends on end-use): For finer powder and smooth texture, mango cubes can be passed through a pulper to obtain pulp. Alternatively, slices can be directly freeze-dried and then powdered. Pretreatment (Optional): To preserve color and flavor, the pulp or slices may be treated with: Ascorbic acid (0.1–0.3%) or Citric acid (0.2–0.5%). Freezing: Rapidly freeze the mango pulp/slices at –35°C to –40°C. Quick freezing forms small ice crystals, preserving flavor, nutrients, and texture. Freeze Drying: Place frozen mango in the freeze-dryer. Primary Drying (Sublimation): Shelf temp: –40°C to –50°C, gradually raised to 0°C. Ice sublimates directly under vacuum, removing most water. Secondary Drying (Desorption): Shelf temp: 20–40°C under vacuum. Removes bound water, ensuring final moisture 2–4%. Milling / Grinding: Dried mango slices/pulp sheets are milled into fine powder using a hammer mill or pulverizer. Powder is sieved to uniform mesh size (80–100 mesh). Blending & Standardization (Optional): For flowability and stability, maltodextrin or other permitted carriers may be added. Blended to maintain consistent flavor, color, and solubility.
