Manufacturing Process:
Raw Material Selection: Choose ripe, firm, and uniform kiwifruits. Avoid overripe, damaged, or diseased fruits. Washing & Cleaning: Wash thoroughly with potable water. Sanitization with 50–100 ppm chlorinated water to reduce microbial load. Peeling & Cutting: Peel the outer fuzzy skin. Cut into small slices or cubes (5–10 mm thick) for uniform freezing and drying. Pretreatment (Optional): To prevent oxidation and preserve bright green color: Dip slices in ascorbic acid (0.1–0.3%) or citric acid solution (0.2–0.5%) for a few minutes. Drain excess solution. Freezing:  Rapidly freeze kiwi slices at –35°C to –40°C. Quick freezing forms small ice crystals, preserving cell structure and nutrients. Freeze Drying: Place frozen kiwi slices in the freeze-dryer. Primary Drying (Sublimation): Shelf temperature: –40°C to –50°C, gradually raised to 0°C. Vacuum pressure maintained to sublimate ice directly into vapor. Removes ~90% of free water. Secondary Drying (Desorption): Temperature raised to 20–40°C under vacuum. Removes bound moisture. Final moisture content: 2–4%. Milling / Grinding: Dried kiwi pieces are ground using a hammer mill or pulverizer. Sieving ensures uniform powder size (typically 80–100 mesh). Blending & Standardization (Optional): Powder may be blended for consistency. Anti-caking agents (like maltodextrin or permitted starches) can be added if high humidity is a concern.
