Manufacturing Process:
Raw Material Selection: Select ripe, sweet jackfruit bulbs with uniform maturity. Avoid overripe, fermented, or damaged fruits. Cleaning & Preparation: Wash jackfruit thoroughly with clean water. Manually separate bulbs from the rind and remove seeds. Trim off the fibrous parts. Cutting / Slicing: Cut jackfruit bulbs into small uniform pieces (1–2 cm) for better freezing and drying efficiency. Pretreatment (Optional): To prevent enzymatic browning: Dip in ascorbic acid (0.1–0.3%) or citric acid (0.2–0.5%) solution for a few minutes. Drain excess solution before freezing.Freezing: Rapidly freeze the jackfruit pieces at –35°C to –40°C. Quick freezing ensures small ice crystals and preserves cell structure, flavor, and nutrients. Freeze Drying: Transfer frozen jackfruit to the freeze-dryer. Primary drying (sublimation): Shelf temp: –40°C to –50°C, gradually raised to 0°C. High vacuum removes ice by sublimation. Secondary drying (desorption): Temp: 20–40°C under vacuum. Removes bound moisture, achieving final moisture 2–4%. Milling / Grinding: Dried jackfruit pieces are ground into fine powder using a hammer mill or pulverizer. Sieving ensures uniform particle size (typically 80–100 mesh). Blending & Standardization (Optional): Powder may be blended to adjust flavor, sweetness, or solubility.Anti-caking agents (e.g., maltodextrin, permitted starches) may be added if required.
