Manufacturing Process:
Raw Material Selection: Select ripe, firm, and bright red cranberries with uniform size and maturity. Avoid underripe (very tart), overripe, or damaged fruits. Washing & Cleaning: Wash cranberries thoroughly with potable water. Sanitize using 50–100 ppm chlorinated water to reduce microbial load. Sorting & Cutting (Optional): Remove stems, leaves, and defective berries. Cranberries may be: Used whole, or Halved / lightly crushed to improve drying efficiency. Pretreatment (Optional): To preserve bright red color and reduce enzymatic browning: Dip in ascorbic acid (0.1–0.3%) or Citric acid solution (0.2–0.5%) for 2–3 minutes. Drain excess solution. Freezing: Rapidly freeze cranberries at –35°C to –40°C. Quick freezing ensures small ice crystals, protecting cell structure, color, nutrients, and flavor. Freeze Drying: Transfer frozen cranberries to the freeze-dryer. Primary Drying (Sublimation): Shelf temperature: –40°C to –50°C, gradually raised to 0°C. High vacuum sublimates ice directly, removing ~90% of water. Secondary Drying (Desorption): Shelf temperature: 20–40°C under vacuum. Removes bound water. Final moisture: 2–4%. Milling / Grinding: Freeze-dried cranberries are ground into fine powder using a hammer mill or pulverizer. Sieve to achieve uniform mesh size (80–100 mesh). Blending & Standardization (Optional): To reduce stickiness and improve flowability, carriers like maltodextrin may be added. Blend to ensure consistent flavor, color, and solubility.
